No Bake Cookies
1/2 cup butter
2 cups sugar
1/2 cup whole milk
4 Tbls. unsweetened cocoa
pinch of salt
1/2 cup creamy peanut butter
2 tsp. vanilla extract
3 cups quick oats
1. In a medium saucepan, cook butter, sugar, milk, cocoa, and salt until butter is melted.
2. Add peanut butter and stir over medium heat until combined.
3. Remove from heat and stir in vanilla and oats.
4. Use a tablespoon to form balls. Place on wax paper lined cookie sheet or in cup cake liners.
5. Let cool to room temperature to set.
6. Garnish with toasted coconut.
If there is one food that reminds me of school lunch as a kid, then it is No Bake Cookies. I loved them. When the lunch ladies served those, I was one giddy student. For nostalgia sake, I made these for my kids for the first time and found that they too think they are a yummy treat.
