2 lbs. chicken tenders, trimmed
2 cups Sweet Baby BBQ sauce, divided
1 head of romaine lettuce, washed and cut into medium pieces
1/2 cup red pepper, chopped
1 cup roma tomatoes, chopped
1/2 cup red onion, chopped
1 can black beans, rinsed and drained
1 cup fresh corn kernels
1 cup Ranch dressing
corn tortilla strips
1. Marinade chicken tenders in BBQ sauce for about 20 minutes.
2. Grill chicken on medium heat for about 6 minutes per side, turning once or until no longer pink.
3. In large bowl, toss lettuce, tomatoes, onion, beans, and corn.
4. On six plates, layer salad, chicken, and tortilla strips.
5. Serve with extra BBQ sauce and fresh Ranch dressing.
