3/4 cup canola oil
3/4 cup soy sauce
1/2 cup lemon juice
1/4 cup Worcestershire sauce
1/4 cup prepared mustard
1 1/2 teaspoon black pepper
1 teaspoon crushed garlic
Put all ingredients in dish. Add chicken, cut into large chunks. Let sit, covered in refrigerator for 3 to 4 hours.
For Kabobs:
1. Soak wood skewers in water for 30 minutes.
2. Thread meat and veggies alternately onto skewer, leaving 1/4 inch between pieces.
3. Grill on medium, high coals for 8 to 10 minutes, turning once, until chicken is no longer pink and juices run clear.
Kebabs look impressive, but are easy, quick, and delicious. Bonus: they are light in calories while being bold in flavor.
