Spinach and Strawberry Salad
1 bunch spinach leaves, washed, patted dry
1 cup sliced strawberries
1 (7 oz.) can mandarin oranges
1/2 red onion, sliced thin
1/3 cup almonds
3 tablespoons sugar
In saucepan, melt 3 tablespoons sugar. When sugar starts to melt, add almonds. Remove from heat when almonds are sugar coated. Toss all ingredients in salad bowl. Serve with poppy seed dressing.
Poppy Seed Dressing:
3/4 cup canola oil
1/3 cup red wine vinegar
1/3 cup sugar
1 teaspoon dry mustard
3/4 teaspoon salt
1 tablespoon poppy seeds
Put all ingredients in jar with lid and shake. Pour on salad just before serving.
