1 rotisserie chicken, cooked and shredded
6 cups water
2 chicken bouillon cubes
2 ( 13 oz.) cans cream of chicken soup
3 ( 15 oz.) cans chicken broth
3 carrots, peeled and sliced
2 cups broccoli, chopped
1 onion, chopped fine
1 (8 oz.) package frozen cheese tortellini
1/2 tsp. basil
1/2 tsp. oregano
1/2 tsp. salt
1/2 tsp. pepper
Put all in stock pot and bring to boil. Simmer 20 minutes or until carrots are tender. Serve with Parmesan cheese, shredded.
We broke from tradition this year for our Halloween Supper. Instead of Taco Soup we opted for Tortellini Soup. I like the fall colors of the soup and the quick assembly. My kids love this soup. It is savory, healthy, and hardy. I was able to throw the soup together, get the kids dressed and ready, cut both my boy's hair, and take pictures of my trick-or-treaters. Point being: This soup is family friendly and quick!
