Clam Sauce and Pasta



1 cup onion, chopped fine
1/4 cup fresh Parmesan, shredded
1/4 cup butter
1 cup cream
1 lb. angel hair pasta, cooked tender
3 cans chopped clams and juice
2 Tablespoons fresh parsley, chopped fine
1 clove of garlic, crushed
1 teaspoon basil
1 teaspoon thyme
1 1/2 Tablespoons flour
2 Tablespoons olive oil
dash of salt and pepper
1. Heat butter and olive oil in skillet. 
2. Saute onions and garlic until tender. 
3. Add parsley and clams with juice. 
4. Salt and pepper to taste. 
5. Add basil, thyme, cream, flour, and Parmesan cheese. 
6. Simmer 15 minutes. Do not allow to boil. 
7. Serve over angel hair pasta.

This sauce is lightly creamy and savory. I adore the clam sauce at The Spaghetti Factory. Fortunately, this recipe tastes very similar.

Mama's Red Meat Sauce with Spaghetti


1/2 lb. ground beef, browned
1/2 lb. Italian sausage, browned
1 (32 oz.) can crushed tomatoes
1 (6 oz.) can tomato paste
6 oz. spaghetti noodles, cooked tender
1 Tablespoon Italian Seasoning
1 to 2 teaspoons bottled garlic
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon sugar

1. After browning hamburger in large skillet, add crushed tomatoes, tomato paste, garlic, and Italian seasoning. 
2. Stir to mix. 
3. Simmer 15 minutes.
4. Serve over spaghetti noodles. 
5. Garnish with fresh Parmesan cheese.

Pizza

 

2 to 4 loaves white Frozen Bread Dough, thawed and raised according to package directions
2 (6 oz.) cans tomato sauce
2 (6 oz.) cans tomato paste
1 Tablespoon Italian Seasoning
1 teaspoon garlic powder
1 Tablespoon water
1 teaspoon sugar
2 cups fresh Parmesan Cheese, shredded
4 cups mozzarella cheese, shredded
3 cups mild cheddar cheese, shredded
1 package pepperoni
1 package sausage, browned
2 (5 oz.) cans, mushrooms, drained

1. Roll out thawed, raised bread dough (To speed process, heat oven to 200 degrees then turn off oven and place bread dough on oven safe plates to rise.) 
2. Using rolling pin, stretch one dough loaf to fit one greased cookie sheet. 
3. In saucepan, combine paste, tomato sauce, garlic powder, sugar, water, and Italian seasoning. Let simmer 10 minutes. 
4. Spread 1/2 to 3/4 cup sauce over dough to cover all but edges. 
5. Sprinkle with Parmesan cheese, sausage, pepperoni, mushrooms, mozzarella then cheddar cheese. 
6. Bake one pan at a time in 400 degree oven on bottom rack for 12 to 14 minutes or until bottom of crust is golden brown and cheese is melted.

Homemade pizza is truly a special treat. It is so fun rolling out the dough and adding toppings. Children love getting in on the action.

Chocolate Sheet Cake



2 cubes butter
1 cup water
1/4 cup cocoa, unsweetened
2 cups flour
2 cups sugar
2 eggs
1/2 cup buttermilk (sour milk using 1 Tbls. fresh lemon juice per one cup milk)
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/2 teaspoon salt

1. Mix flour, sugar, and salt in in large bowl. 
2. Melt butter in saucepan. 
3. Add water and cocoa. 
4. Bring to boil. 
5. Pour butter mixture over flour mixture. 
6. Add eggs, baking soda, milk, vanilla, and cinnamon. 
7. Mix well. 
8. Pour into greased, jelly roll pan. 
9. Bake in 350 degree oven for 15 to 20 minutes (until toothpick comes out clean). 
10. Frost with butter cream chocolate frosting.

Chocolate Butter Cream Frosting:

2 cups powdered sugar
1/2 cup cream
1/4 cup butter, softened
1 teaspoon vanilla extract
 1/4 cup unsweetened cocoa

1. In medium bowl, cream all ingredients together until smooth. 
2. Frost sheet cake when cool.

Mercedes and the Chocolate Pilot

While I am waxing nostalgic, I thought I would introduce another fine historical picture book, Mercedes and the Chocolate Pilot--a True Story of the Berlin Airlift by Margot Theis Raven.

This is a great conspiracy story: Mercedes writes to Lt. Gail Halvorsen petitioning him to spot her war-torn home in Berlin with the chickens on one of his many notorious chocolate drops to the children there.

This story pulls on my heart strings. I have a very difficult time not choking up when reading this--which prompts a discussion with my children regarding an event that happened long ago in a land far from my own.

Let me explain: My Grandma Schmidt is from East Germany. She immigrated to America before the second world war, but had family members who stayed. She and my Grandpa--also from Germany--used to put together and ship "care packages" full of non-perishable food, vitamins, medicine, etc. to family members in communist occupied East Germany. Grandma felt fortunate to be living in America.

My Grandma never dared travel back to her homeland before dying. She refused to accompany her husband--my Grandpa--on his trip back to Germany. My Grandmother cried when the Berlin wall came down. My Grandma was not one to show emotion. So this was a big deal to her as it was to the world.

I love chocolate. Gail S. Halvorsen is my kind of guy--someone who realized what a little chocolate could do to lift the spirits of children in an oppressed society.




Fried Chicken



 

6 chicken breasts, trimmed and cut into 4 pieces
1 cup flour
1 tsp. garlic powder
1 tsp. salt
1 tsp. fresh black pepper
1 tsp. paprika
1/4 cup butter
1/4 cup canola oil

1. Combine flour and seasonings and spread evenly on a plate. 
2. Dredge each piece of chicken in seasoned flour.
3. Heat oil and butter on medium heat. 
4. Transfer chicken to hot skillet. 
5. Sear each side of chicken on medium high about 5 minutes per side. 
6. Cover chicken and cook for another 15 to 20 minutes. Turn once. Chicken is done when juices run clear and no longer pink.

I love this chicken cold. If not eating immediately, wrap in tin foil and refrigerate. My honey thinks this chicken rocks.

Don Pablo's Mexican Kitchen Carnitas


3 lb. boneless pork roast
2 Tbls. canola oil
2 Tbls. butter
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
3 cups water
12 corn tortillas
1 cup canola oil  (for frying tortillas)

Toppings:

mild cheddar cheese, shredded
cilantro
lime wedges
tomatoes, chopped
avocados, peeled and sliced

Season pork with cumin, garlic powder, salt and pepper. In large stock pot on medium high heat, brown all sides of pork roast in 2 tablespoon oil and butter. Pour water into pot with roast and reduce heat to medium low. Bring to a rolling simmer. Cover. Cook for 4 to 5 hours until pork falls apart with a fork. Shred with fork. Drain liquid. Set roast aside and keep warm while cook tortilla shells.

Cook tortilla shells in 1 cup hot oil in shallow pan using tongs--about 3 minutes. Turn once. Place tortillas on plate between sheets of paper towels to absorb excess oil. Keep warm.

Top tortilla shells with shredded pork. Squeeze pork liberally with lime juice. Top with cilantro, cheese, tomatoes, and avocado slices.

Tip: The lime juice is essential in bringing out the flavors in this fabulous Mexican Dish. I created this recipe after dining at "Don Pablo's Mexican Kitchen" in Orlando, Florida. Their Carnitas were delectable. This feeds a crowd! Kids love them!!

Cinnamon Sugar Tortilla Chips with Fruit Salsa


Fruit Salsa:

2 cups peeled, cored, chopped Fuji Apples
2 cups fresh, pineapple, chopped (you will find pineapple spears at Costco)
2 cups fresh strawberries, chopped
2 cups fresh peaches, pealed, and chopped (Add when in season. Omit, if not.)

1. In bowl, combine apple, pineapple, strawberries, and peaches. Serve with cinnamon-sugar tortilla chips.

Cinnamon Sugar Tortilla Chips:

4 flour tortillas
1/2 cup sugar
1 tablespoon cinnamon
1/4 cup butter, melted

1. Heat oven to 400 degrees.
2. Brush both sides of tortilla with melted butter.
3. Sprinkle with a mixture of cinnamon and sugar.
4. Bake for 12 minutes, turning tortillas once.
5. Let cool and break into chips.

This dessert is addicting. The crispy sweet cinnamon chips complement the sweet fruit salsa. This dessert is nice year round and is a great appetizer.

The Pioneer Woman



On a last minute whim, I decided to drive to the Salt Lake Foothills to see Ree Drummond at her book signing at "King's English Bookstore" in the Avenues. My husband, daughter, and I were the last to be allowed through the glass doors of the 15th Street Gallery thronging with die-hard fans.

I just discovered Ree a couple months ago. I didn't stay for the book signing, because I didn't want to stand in line all night. Poor girl is going to need a wonderfully relaxing hand massage. Women there were crazy. Many had been waiting for 4 hours. We did stay to listen to her question and answer series. She didn't impart anything that I didn't already know from her web site and appearance on Studio 5 this morning at 11:00. I went to 24 hour fitness to watch the segment since I don't have television.

Well, she is very witty and unmistakably popular. If you haven't gone to her web site yet, you will find that she is fresh, honest, and gifted. She has this unbelievable following and success story that could turn any blogger green with envy. Move over Elphaba from "Wicked!"

I got a one good pic. Her cookbook is delightful. I recommend it to all. She includes down home recipes that are sure to please anyone's palate.


Cafe Rio Pork and Tomatillo Ranch Dressing

This is one of my most prized recipes. If you crave Cafe Rio like I do, then you will fall in love with this recipe head over heels. I know a lot of people claim that they have the Cafe Rio's pork recipe, but I doooo!!! Try this and you will know for yourself and impress your friends and families. It is super easy. I'm not an "over the top" cook with exotic ingredients and mounds of time spent slaving over a hot stove. I am busy, busy, busy just like you are with your darling family so I try to be as quick and efficient in everything I do to really juice life. Really. the only thing I do over the top is photography, then I am a real nut!!

4 lb. premium boneless pork roast
5 (6 oz.) cans tomato sauce
4 cups Dr. Pepper
1/2 cup brown sugar
1/4 cup molasses
1 tablespoon cumin
3 teaspoons bottled garlic

Combine tomato sauce, Dr. Pepper, sugar, molasses, garlic, and cumin in bowl. Put pork roast in crock pot or large stock pot and pour sauce over top. Bring to a rolling simmer. Cook on medium low heat for 6 hours in a steady simmer. Shred pork with fork while still in pan and sauce and cook for one hour more. Serve with refrigerated tortillas that you cook in a non-stick dry skillet, turning once when starts to bubble and brown on side. Top with cilantro, tomatoes, lettuce, black beans, tortilla strips, and tomatillo dressing.

Creamy Tomatillo Dressing

3 tomatillos, husked, washed and cut into quarters (tomatillos are found in the produce section of your grocer. They look like green tomatoes with a thin paper wrapping or husk)
1  package buttermilk ranch dressing mix
1 cup mayonnaise
1 cup fresh cilantro, washed
1/2 cup buttermilk
2 cloves of garlic or 1 teaspoon bottled garlic
juice of one lime
3 tablespoons sugar
3 drops Tabasco sauce
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin

Combine all ingredients in blender and puree. Refrigerate one hour. You will absolutely want to drink this! But don't! There are things that make the world go around and tomatillo dressing is one of them!!

Beautiful, Youthful Skin

I promised! So here goes one of our best kept secrets for skin care and beautiful, youthful skin.

To begin, a little quiz. What is the first thing people notice about a woman?

a. Clothes
b. Hair
c. Figure
d. Facial Features
e. Complexion

A fashion magazine performed a poll to determine the answer to this question and the result is e. complexion. I don't know about you, but I got the answer wrong. At first, I was surprised, but the more I thought about it the more it rang true. Our skin is an organ and the first line of defense against disease. It needs to be treated with care and consideration. It holds us together, literally. Okay, now I'm being dramatic, but you get the picture. I posted a picture of myself, no touch up, natural lighting, and I can honestly say my Mom has about as many wrinkles as I do. I will post a recent pic of her next week. I will coerce her into letting me do a photoshoot.

So I asked my Mom years ago, "Mom, what is your secret? You don't have wrinkles!"

And as you can imagine there is more than one answer. I will list, but not necessarily in order of importance.

1. Don't eat a low-fat or non-fat diet. You probably think I'm joking, but I'm not. This is one of the worst things you could do for your lovely skin. And if you don't believe me and my beautiful Mom then believe the preeminent, Dr. Perricone--Dermatologist to the stars and Oprah Winfrey's skin guru. I've read many of his books and I agree with everything. Essentially, if you eat a non-fat or low-fat diet for a long period of time, you will look like something that stepped out of the grave. It really can be frightening. Look at women you know who repel fat in their diet and take a close look at their skin. They're probably more wrinkled than your Great Grandma. I know this is true of the women I know who have subscribed to a low fat diet over the years. Their skin is far from youthful I can assure you. The answer is to eat good fats. Good fats include all nuts, avocados, olive, canola, safflower, sunflower oils, and sunflower seeds. We all need a little good fat every day in our diet. Use good oil on your salad. Add avocado to your turkey sandwhich on whole grain bread. Snack on sunflower seeds instead of partially hydrogenated buttered popcorn. Your skin will thank you in kind.

2. Moisturize! Moisturize! Moisturize! This is a beauty secret of many a women who have beautiful complexions. It is especially important to those of us who live in dry climate. We have a double hurdle. Utah is the driest state in the Union. I thought it would have to be Arizona or New Mexico, but no. It is Utah. Go to San Diego and your skin will be moist and supple much more naturally. And the bad news is those who live in dry climates will age 10 years quicker than those who don't. So we have to work extra hard. One of the best night creams is called DMAE cream. This little baby is touted by Dr. Perricone and Groovy Mom approved as well. My Mom and I have been lathering this on our skin for years. The other product secret is Petroleum Jelly. Yep. Cheap and readily available at any store. Dab this on throughout the day, but especially at night to seal in the DMAE cream. Now this little secret isn't documented, but has proven to be effective even for a supermodel who appeared on Oprah.

3. Use an antioxidant toner and moisturizer with sunscreeen for the day--preferably with vitamin C.
My Mom recently discovered Avalon Organics at the store. It smells of fresh peeled oranges and is hands down my favorite face cream. It is inexpensive and just plain delicious on your skin. But don't eat it! I helped my son with a science fair project one year in elementary school. He did the project on oxidation. We cut up two bananas. One banana was left to the open air on a plate un-altered. The other banana was also left open to the air on a plate, but was sprinkled with vitamin C tablets. In minutes, the un-altered banana was shriveled and brown. The vitamin C laden was still a beautiful, butter-yellow, plump banana. It made a very strong impression on me. Not only is this moisturizer full of antioxidants, namely vitamin C, but also contains a sunscreen. Sunscreens are naturally drying to the skin, but are essential. Three times a week, use an exfoliant cleanser to sluff off dead, dry skin. Men shave their face which acts to exfoliate their skin everyday. Oft times men are less wrinkled than their female counterparts.

4. Always use sunscreen. I can not emphasize this enough. People who tan break down the collagen in their skin and lose elasticity. Sun is very damaging to the skin. Apply sunscreen every morning regardless of whether you plan to be in the sun that day or not. Majority of sun damage is incidental--through the windshield in your car, walking to and from stores, etc. If you were a tanner in your youth, sun damage will show in your 30's, 40's, and beyond. Sun damage is accumalative over time. If you accrued a bad sun burn as a child, the effects of it will be seen in your adulthood--sad, but true. Protect your skin. Protect your health. UVA and UVB rays are not your skin's friend--too much and you are at increased risk for skin cancer.  Wear a sunscreen with at least a 15 SPF--sun protection factor. This may be in your moisturizer or separate. If your sunscreen is separate from your moisturizer, apply the sunscreen first, or you render it uneffective. Wear face make-up. Women who consitstly wear foundation, have much nicer skin than women who go El Natural.

5. Wear sunglasses. Sunglasses not only protect your eyes from damaging UVA and UVB rays, but also the skin around your eyes where we tend to get crows feet. This is typically not a tough thing to subscribe since sunglasses are so very chic, stylish, and hip. Sunglasses are a fashion statement. So don a pair of your favorite shades not only for the poolside or ski slopes, but every day as you drive in a car, go for a walk, go to the store.

6. Drink 8 glasses of water every day. Our body needs water for proper cellular function, weight loss, and beautiful skin. Water ensures that our skin will be hydrated and supple. The body is comprised of  60% water. We need about a gallon of water every day. Many ailments would be improved if we were more properly hydrated. Drinking water is one of the simplest, cheapest ways to enhance and help the quality of your skin. Water helps flush our bodies of toxins and waste. We can not go three days without water. Our kidneys would shut down and we would parish. Fill your water bottle. Keep a quart jar in the refrigerator filled with chilled water. Squeeze a little lemon or lime into your water for a little extra refreshment. Water is essential to life and the life of your skin. Drink up!

7. Eat an antioxidant diet. Include lots of fresh fruits and vegetables. Eat salmon, tuna, walnuts, almonds, flax seed oil, canola oil, and avocados to get your daily supply of Omega-3 oils. If you want a 3 day face lift, Dr. Perricone suggests you feast on Salmon, broccolli, and blueberries for three consecutive days. 8. Aerobically exercise 30 minutes a day. Do you want to know a beauty secret of pageant queens? Many of them exercise moderate to vigorously the morning of a pageant. They know that the increased circulation and oxygenation to the skin will give them the healthy glow that no make up artist can. My Mom and I used to train and run marathons. After a long run, we would always notice how radiant our skin was especially after we cooled down, showered, and applied our make up. We could not achieve the effect any other way. Of course, we were drinking our water, wearing sun screen and sunglasses, and eating a relatively healthy diet as well.

9. Sleep on silky satin or silk pillow cases. This is one of my Mom's quirky suggestions, but it seems to make a big difference especially as she ages. My Mom's mother was a beautiful seamstress who made all their pillow cases out of satin or silk. When my Mom established her own homestead, she used store bought cotton. Then one morning she woke up to creases in her cheeks and skin and let out a yelp. She blamed the pillow cases and replaced them with store bought silky satin ones. Now she wakes up with little to no extra, unwanted creases in her skin. I too have adopted this little tip and you know what she is right. "Mother knows best."

10. Grow old gracefully. Pass on botox, collagen injections, restylane, etc. Forget surgical face lifts. Some of these gals end up looking like monsters with frozen faces and expressions not to mention the risks involved. Poor Priscilla Presley now has lumpy skin due to faulty collagen injections. I had a patient in her mid 80's who looked so strange I couldn't quite put a finger on it until I realized she had a face lift. Her cheeks were pulled so tight they were smooth, but it didn't match her forhead or eyes which were still laced with age related wrinkles. She looked odd--off. She was otherwise attractive. I really believe if she would have left well enough alone, she would have looked a lot better and more natural. There is a certain amount of aging that no one is able to stop no matter how hard we try. Smile. It increases your face value. Live large. Be happy and gracious and it will show in your face. Laugh lines are more than acceptable.

Apple Crisp



6 tart apples, peeled, cored, and sliced (Granny Smith)
1 1/2 cups old fashioned rolled oats
3/4 cup brown sugar
1/2 cup butter, softened
1/4 cup flour
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1 resealable bag

1. Place apples in 2-quart casserole dish.
2. Put remaining ingredients in medium bowl and stir to combine.
3. Spread oat mixture over apples and bake in 375 degree oven for 40 minutes.
4. Serve warm with sweetened whipped cream or vanilla ice cream.

This recipe is homey and delicious!! It's quintessential comfort food. The topping tastes like a homemade oatmeal cookie.

Tortellini Soup


1 rotisserie chicken, cooked and shredded
6 cups water
2 chicken bouillon cubes
2 ( 13 oz.) cans cream of chicken soup
3 ( 15 oz.) cans chicken broth
3 carrots, peeled and sliced
2 cups broccoli, chopped
1 onion, chopped fine
1 (8 oz.) package frozen cheese tortellini
1/2 tsp. basil
1/2 tsp. oregano
1/2 tsp. salt
1/2 tsp. pepper

Put all in stock pot and bring to boil. Simmer 20 minutes or until carrots are tender. Serve with Parmesan cheese, shredded.

We broke from tradition this year for our Halloween Supper. Instead of Taco Soup we opted for Tortellini Soup. I like the fall colors of the soup and the quick assembly. My kids love this soup. It is savory, healthy, and hardy. I was able to throw the soup together, get the kids dressed and ready, cut both my boy's hair, and take pictures of my trick-or-treaters. Point being: This soup is family friendly and quick!
